Spaghetti with Zucchini, Tomatoes, and Basil

Ingredients

  • 3 tablespoons Jovial Extra Virgin Olive Oil
  • 2 medium zucchini, sliced
  • ยฝ medium onion, minced
  • 1 ยฝ lb cherry tomatoes, halved
  • ยฝ cup fresh basil
  • 12 oz. Jovial Spaghetti of choice

This is one of those recipes that doesn't need to be complicated to be incredibleโ€”just the goodness of fresh spring produce and our organic Extra Virgin Olive Oil. Make it with the Jovial Spaghetti of your choice.

Instructions

  1. Add 2 tablespoons of olive oil, zucchini, and onions to a large skillet. Cook on medium heat for 5 minutes until the zucchini is browned, but still firm.
  2. Transfer zucchini and onions to a bowl. To the same skillet, add 1 tablespoon of oil, tomatoes, and salt to taste. Cook the tomatoes on high until they soften and caramelize, about 5 minutes, but still hold their shape. Turn off the heat.
  3. Mix in zucchini and basil. Cook the pasta according to the cooking instructions on the box. Drain the pasta, toss with the sauce, and serve with more fresh basil.
