Organic Einkorn Pancake and Waffle Mix

First, buying mixes is not my first option. However, my "rainy day" pantry, it's a smart choice, if you have healthier options to choose from , ahead of time! For my family, 1 bag makes 2 meals. The thickness of the mix leans heavily towards an excellent waffle consistency, and makes a thick pancake. This actually serves my family well, as half only like waffles, and the other only likes pancakes. The waffle side are eating the "pancakes" because of the thickness of the finished product, and they say they 'taste more like a waffle". That works out in my favor, as I'm on the pancake side, and the chief cook in the house. It's a win-win all around. Side note- we do not have any gluten issues, but, we just like the taste of einkorn! I have used 2 packages to date, and have added this mix as a staple to my pantry.
