The Story of Jovial and Einkorn

When Carla and Rodolfo had the idea of growing einkorn wheat, there was very little of this grain being cultivated worldwide, so they had to coordinate the farming themselves. Their search led us to this farm, where they had been growing ancient varieties of oats, barley, emmer, lentils, and chick peas for over thirty years. They had never planted einkorn before, and now, only a few years later, we are working together on this project in a perfect partnership committed not only to what we are growing, but how we grow it.

    Special Treat

    WE don’t normally eat pancakes. We’ve never found a gluten free mix that works. Once I learned of einkorn and found this door we’ve given it a go and it it’s the best surprise treat in a relaxing Saturday when we want to surprise our kids!

    I got this mix for my teen boys so they could make their own einkorn pancakes. They did it all by themselves following the recipe on the first try but they said they didn't taste nearly as good as the ones from the Einkorn cookbook and there were a couple left on the plate (sorry, I agree but honestly the ones in the cookbook are AMAZING). The next day they wanted more, so we decided to experiment a bit and used buttermilk instead of the milk and mixed some melted butter into the eggs/buttermilk. BTW, we ended up mixing extra buttermilk in because the batter was a little too thick. WOW - So fluffy and tasted terrific! I only got one pancake because they were GONE. Thank you for offering this mix!
