The Story of Jovial and Einkorn

When Carla and Rodolfo had the idea of growing einkorn wheat, there was very little of this grain being cultivated worldwide, so they had to coordinate the farming themselves. Their search led us to this farm, where they had been growing ancient varieties of oats, barley, emmer, lentils, and chick peas for over thirty years. They had never planted einkorn before, and now, only a few years later, we are working together on this project in a perfect partnership committed not only to what we are growing, but how we grow it.

    I ground the wheat berries in a vita mix blender and worked on the starter for six days. Made the levain and made the bread according to the recipe.. it turned out very dense no open crumb hard crust . Then I realized that are using all purpose flour that's almost like white flour, which has more gluten. I don't want to use that flour because it's not that healthy when you have the nutrients removed. if you have any ideas how I can have more elasticity in the bread, let me know. Thank you.

    I just tried this product, and it's also my first time ordering from Jovial. I was extremely pleased with the product and the taste was exquisite. I will be a repeat customer. The product did not upset my stomach at all. I am gluten sensitive and also diabetic. I like that this ancient Einkorn grain product is organic and has not been coated with chemicals or has had any bio manipulation. It's time we had food that is truly healthy for us instead of making us sicker. I'm hoping you will be able to continue putting out this high quality product.

    I tried this pasta for the first time and it was also my first time ordering from Jovial. I was very pleased with all products in my order. The pasta did not upset my stomach, like traditional American wheat products and the taste was absolutely exquisite I I love that the products are organic and made from the ancient grain Einkorn that has not been altered by chemicals or bio manipulation. I will be a repeat customer.
