Summer Roasted Vegetable Pasta Salad

Ingredients

  • Bionaturae Extra Virgin Olive Oil
  • 1 medium red onion, medium dice
  • 2 zucchinis, cut into medium chunks
  • 3 carrots, medium dice
  • 1 pint cherry tomatoes, cut in half
  • 3 red bell peppers, cut into medium chunks
  • 1 lb box Bionaturae Durum Semolina Chiocciole
  • ¼ cup fresh lemon juice, or more to taste
  • 1 bunch fresh basil, about 25 leaves, sliced thinly
  • Parmigiano Reggiano, optional garnish
