Vegan Chickpea Tuna Salad Recipe

Ingredients

  • 2 tablespoons of nori powder ground in food processor from 1 sheet of nori
  • 1 jar Jovial 100% Organic Chickpeas, drained
  • ¼ cup red onion
  • ¼ cup pickles
  • 2 tablespoons pitted green olives
  • ¼ cup parsley plus more for garnishing
  • 2 tablespoons Jovial 100% Organic Extra Virgin Olive Oil
  • ⅛ teaspoon salt
  • ½ cup vegan mayo
  • 1 tablespoon lemon juice

Instructions

  1. Add chickpeas to a food processor and pulse until consistency of chunky tuna. Set aside.
  2. Add red onion, pickles, olives, parsley, olive oil, salt, nori powder, vegan mayo, and lemon juice to the food processor and process until fine.
  3. Combine with chickpeas.
  4. Garnish with parsley and serve.
