Stelline Minestrone Soup

Ingredients

  • 2 tablespoons Jovial Extra Virgin Olive Oil
  • 1 large onion, finely chopped
  • 1 garlic clove, minced
  • 4 cartons (67.6 oz) of Kettle & Fire Classic Bone Broth
  • 1 jar (13 oz) Jovial Borlotti Beans, drained and rinsed
  • 1 jar (18.3 oz) Jovial Diced Tomatoes
  • 4 carrots, diced
  • ½ teaspoon of dried oregano
  • Salt and pepper to taste
  • 1 cup Jovial Brown Rice Stelline
  • 1 package (10 oz) frozen spinach (thawed and squeezed dry)
  • Parmigiano Reggiano (optional)

Minestrone is a nourishing soup we love to enjoy year-round! While there are countless variations of this ancient Roman recipe, it usually consists of vegetables, rice or pasta, and beans. In the version, we packed in wholesome ingredients like Jovial Borlotti Beans, Jovial Diced Tomatoes, carrots, spinach, Kettle & Fire Classic Chicken Bone Broth, and Jovial Brown Rice Stelline. Our tiny pasta stars cook up to perfection, complementing the flavorful broth and tender vegetables. This is just the recipe to make when you’re looking for simple, yet comforting homemade meal to serve to loved ones.

Instructions

  1. In a large pot, heat two tablespoons of olive oil over medium-low heat. Add the onion and garlic and cook for a few minutes, until tender.
  2. Add the tomatoes, carrots, beans, broth, oregano, salt, and pepper to taste. Bring to a simmer and cook until the carrots are tender, at least 15 minutes.
  3. Add one cup of stelline pasta and spinach. Cook until the pasta is al dente, checking for doneness around 8-9 minutes.
  4. Top with freshly grated Parmigiano Reggiano, if desired.
  5. Note: When heating leftovers, add a couple cups of broth, if necessary.
