This type of dish is really popular in Italian restaurants in the summer when tomatoes are ripe. SautΓ©ing halved cherry tomatoes in olive oil soften them and flavor the oil nicely. Add some fresh mozarella and basil and you have an authentic Italian pasta dish.
Instructions
- In a large skillet, cook olive oil, garlic, tomatoes and salt to taste, on high heat for 7-10 minutes until tomatoes are very soft but still hold their shape.
- Cook pasta according to package directions.
- Add cooked pasta to the skillet on medium heat for a minute, mixing the pasta and sauce well.
- Add mozzarella and basil and serve.
