Einkorn Penne with Spicy Moroccan Chickpeas

Ingredients

  • 12 oz. Jovial Whole Grain Einkorn Penne Rigate
  • 13 oz. Jovial Chickpeas, drained
  • 1 medium onion, minced
  • 2 cloves garlic, minced
  • 1 cup Jovial Diced Tomatoes
  • ½ tsp. ground cumin
  • 1 tsp. paprika or chili powder
  • 2 tsp. ground ginger
  • 1 tsp. ground coriander
  • 1 tsp. turmeric
  • 3 tbsp. Jovial Extra Virgin Olive Oil

Try this Moroccan influenced dish for a flavorful treat. Added spices like cumin, coriander and paprika aid digestion. Garbanzos are an often-used ingredient in Italian and Mediterranean cooking, and they're favored by vegetarians since they have one of the highest protein levels of all plants.

Instructions

  1. Sauté onions and garlic in olive oil for 2 minutes on low heat.
  2. Add spices and let cook well with the onions for 2 minutes.
  3. Stir in chick peas with salt to taste and cook on low heat for 5 minutes.
  4. Add diced tomatoes and cover, simmering on low for 15 minutes.
  5. Cook pasta according to directions on package.
  6. Toss with sauce and serve with chili powder to taste.
