Penne with Roasted Garlic and Tomato Sauce

Ingredients

  • 12 oz. Jovial Brown Rice Penne Rigate
  • 1 head of garlic
  • 3 tbsp. Jovial Extra Virgin Olive Oil
  • 18 oz. Jovial Crushed Tomatoes
  • ¼ tsp. dried oregano
  • ¼ tsp. dried basil
  • ¼ tsp. dried thyme
  • ¼ tsp. dried sage
  • ¼ tsp. crushed black pepper

Enjoy the healing properties of garlic by roasting the whole cloves and adding them to a tomato sauce, flavored with Mediterranean herbs like basil, oregano, thyme and sage.

Instructions

  1. Slice the tip off the head of garlic to expose all of the cloves. Place in baking dish and drizzle with 1 tsp. olive oil.
  2. Bake at 400°F for 45 minutes, covered with aluminum foil.
  3. Let garlic cool, then remove roasted garlic by squeezing the cloves into a large skillet. Add olive oil, spices, tomatoes and salt to taste.
  4. Simmer for 20 minutes on low heat, pressing the garlic with a wooden spoon to mix in the sauce.
  5. Cook pasta according to the directions on the package.
  6. Toss with sauce and serve with grated cheese.
