Mexi-Mac One-Pot Mac & Cheese

Ingredients

  • 2 tablespoons Jovial 100% Organic Extra Virgin Olive Oil
  • 3 green onions, sliced
  • 2 jalapeño peppers, sliced
  • 1 tablespoon taco seasoning
  • 2 cups milk
  • 1 cup water
  • 8 ounce box Jovial Grain Free Cassava Elbows
  • 1½ cups shredded cheddar cheese
  • ½ cup grated Pecorino Romano

Instructions

  1. In a medium saucepan, cook oil, onion, pepper, and taco seasoning on medium-low heat for 3 minutes.
  2. Add milk and water. Slowly bring to a boil, then lower the heat to a simmer.
  3. Stir in pasta. Cover and cook for 14 minutes.
  4. Turn off heat. Stir in the cheeses. Cover the pot and let stand for 5 minutes before serving.

What's not to love about this incredible gluten free mac and cheese recipe!? Especially when it's made with gluten free and grain free pasta!

  • I have made this several times, and it works wonderfully! It’s so nice not having to mess with draining the pasta and make sauce in a separate pot. Thank you for making my cooking schedule a little lighter!

  • Any non-dairy milk of choice will work fine; nut, soy, rice are all good substitutes
