Homemade Minestrone Soup

Ingredients

  • 12 oz. Jovial Gluten Free Brown Rice Fusilli
  • 1 small leek, sliced
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 4 sprigs of fresh thyme
  • ¼ lb. green beans, diced
  • 1 zucchini, diced
  • 2 potatoes, peeled and diced
  • 1 cup savoy cabbage, chopped
  • 1 cup swiss chard, chopped
  • 3 tbsp. Jovial Extra Virgin Olive Oil
  • 1 cup Jovial Diced Tomatoes

In Italy, a light dinner of minestrone soup is very common and easy to prepare and you will get a nice serving of vegetables cooked in a light broth, flavored by Jovial's tomatoes.

Instructions

  1. Sauté leeks, carrots, celery, potatoes, and thyme with olive oil and salt to taste for 3 minutes.
  2. Add tomatoes and let simmer for 3 minutes, covered.
  3. Add 1 quart of water and bring to a boil.
  4. Add remaining vegetables and simmer on low heat for 30 minutes, covered.
  5. Cook 6 oz. pasta according to package instructions, but drain after6 minutes.
  6. Add pasta to soup & finish cooking for 3-4 minutes, adjusting salt as needed.
  7. Serve with a drizzle of fresh olive oil and grated cheese.
