Gluten Free Hummus Pasta Salad

Ingredients

  • 12 oz. Jovial Brown Rice Penne
  • 2 cups broccoli florets
  • 10 oz. Ithaca Lemon Dill Hummus
  • 1 tablespoon Jovial 100% Organic Virgin Olive Oil 
  • 2 tablespoons of reserved pasta cooking liquid
  • 1 medium red pepper, chopped
  • ½ medium red onion, chopped
  • ½ cup kalamata olives
  • Salt and pepper, to taste

Instructions

  • Cut the broccoli into florets and set aside.
  • Bring a large pot of water to a rolling boil and cook pasta according to packaging instructions, reserving 1 cup of the pasta cooking liquid. When 2 minutes remain, add the broccoli into the same pot with the pasta.
  • Meanwhile, mix the hummus, olive oil, and 2 tablespoons of the reserved pasta cooking liquid together in a large bowl.
  • When the pasta is al dente, drain the pasta and broccoli florets. Add to a bowl of ice water and let cool.
  • In the large bowl with the hummus mixture, add the red pepper, onion, olives, salt, and pepper.
  • Add the drained pasta and broccoli, toss until well distributed. Refrigerate until ready to serve.
