Garlic Vegan Chickpea Salad on Toast

Ingredients

  • 3 tablespoons Jovial 100% Organic Extra Virgin Olive Oil
  • 1 small shallot, diced (about 1/4 cup)
  • 4 garlic cloves, minced
  • 1 bunch Swiss chard, washed and coarsely chopped (about 3 ½ cups)
  • One 13 ounce jar Jovial Organic Chickpeas, rinsed and drained
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon kosher salt
  • 1 country loaf or baguette, sliced and toasted

Instructions

  1. In a large skillet over medium heat, heat the olive oil and sauté the shallot until translucent, 2-3 minutes. Add the garlic and cook for an additional 1 minute, until fragrant.
  2. Add greens, chickpeas, red pepper flakes and salt and toss to combine. Cook, stirring often, until the greens wilt, about 2-3 minutes.
  3. Taste and adjust the seasoning as needed, adding more salt or red pepper flakes, if desired.
  4. To serve, scoop a generous serving of chickpeas onto a slice of toast and enjoy immediately. Refrigerate leftover chickpeas in an airtight container for up to 4 days.
