Instructions
- Cook wheat berries according to instructions on box.
- In a frying pan heat 1 tablespoon of olive oil, then add in the chopped onions and fry until golden and fragrant. Add in ground beef and cook for a few minutes. Add taco mix and a pinch of salt, cook for another minute, then add a ½ cup of tomatoes. Stir and cook for another 5-10 minutes, or until liquid has reduced and the meat is fully cooked.
- While the meat is cooking, drain the black beans. Heat 1 tablespoon of olive oil in a saucepan, then add the cumin and 2 tablespoons of tomatoes along with salt to taste. Cook for a few minutes on low heat, then add in the drained beans and cook for about 5 minutes, stirring frequently.
- Once all components are cooked, assemble your bowl by placing about a cup of wheat berries at the bottom of a shallow bowl or pasta dish. Then top with beef, beans and any other toppings you like. Some of our favorites are salsa, avocado, sour cream, fresh lime, and cilantro.
