Jovial Linen Couche

Hand-crafted on the island of Sardegna by Mario and Franca, a husband and wife team of artisan weavers, this linen couche is made from untreated and unbleached flax that is grown on the island and woven on ancient looms. Also known as a baker’s proofing cloth, Jovial’s Linen Couche is the perfect way to allow your dough to rise gently and wick away just a small amount of surface moisture to create a crispy crust and help hold the loaf shape. Line your favorite colander or bowl for rounds, accordion fold for a lineup of baguettes or swaddle a ciabatta in a folded envelope of this extra-large cloth.

Care Instructions: Hand wash with mild soap, rinse and hang dry before using. Dust generously with rice flour or regular flour to prevent sticking. We do not recommend repeated washing of your couche to prevent small fibers from developing. Shake out excess flour after use and wrap tightly for storage. Hand wash gently after multiple uses.
