The Story of Jovial and Einkorn

When Carla and Rodolfo had the idea of growing einkorn wheat, there was very little of this grain being cultivated worldwide, so they had to coordinate the farming themselves. Their search led us to this farm, where they had been growing ancient varieties of oats, barley, emmer, lentils, and chick peas for over thirty years. They had never planted einkorn before, and now, only a few years later, we are working together on this project in a perfect partnership committed not only to what we are growing, but how we grow it.

    I LOVE THIS FLOUR! It's easy to work with, has countless applications, it's non-gmo, comes from Italy (mio cuore!), tastes great, has fiber, protein and is easier to digest.

    Very good flour. I've substituted all my white flour recipe with this and the difference is pretty subtle. The only difference is the time for it to absorb the liquid part of my recipes. I really hope larger size bags are available eventually.
