The Story of Jovial and Einkorn

When Carla and Rodolfo had the idea of growing einkorn wheat, there was very little of this grain being cultivated worldwide, so they had to coordinate the farming themselves. Their search led us to this farm, where they had been growing ancient varieties of oats, barley, emmer, lentils, and chick peas for over thirty years. They had never planted einkorn before, and now, only a few years later, we are working together on this project in a perfect partnership committed not only to what we are growing, but how we grow it.

    This pasta is delicious! I can cook it to whatever consistency my family prefers and it always tastes great. I am so happy to have purchased this and again, love the low gluten for our digestive systems.

    I just recently purchased the Caserecce Pasta. It was a new pasta to me, but is was so tender and delicious, that it's become my new favorite. Thank you for making such wonderful products with Einkorn. My daughter is gluten sensitive and we've been able to use the Einkorn flour and products. We enjoy cooking and baking so much more than we did with just the gluten-free items.
