The Story of Jovial and Einkorn

When Carla and Rodolfo had the idea of growing einkorn wheat, there was very little of this grain being cultivated worldwide, so they had to coordinate the farming themselves. Their search led us to this farm, where they had been growing ancient varieties of oats, barley, emmer, lentils, and chick peas for over thirty years. They had never planted einkorn before, and now, only a few years later, we are working together on this project in a perfect partnership committed not only to what we are growing, but how we grow it.

    My favorite Pasta!

    This is my absolute favorite pasta… I don’t know what it is about the shape, but it holds onto the sauce like no other pasta. Because of the fold, you always get a great flavor in every bite. I keep stocking up and my family keeps using them up! Truly, you won’t be disappointed

    Great shape for heavy sauces or meats

    This shape is a bit denser than the usual shapes we get in the stores here, so I was excited to find it! It's got a bit of a denser tooth to it, and pairs well with heavier or bolder sauces (with capers, olives, for example.) It was perfect with a sauce made with tomato and ricotta and was so comforting. I bought a second box and we ate it with some bolognese from our local meat farm, for a tasty, quick meal.

    I think it would also go well with heavier meats and fish, such as lamb, beef, swordfish, and heavier vegetable bakes like eggplant. In my mind, I'm seeing this as a perfect pasta for winter or colder days.

    The caserecce pasta shape is perfect for just about any pasta dish. It keeps its shape well and holds up to heavy sauces. The flavor of einkorn is superb. Jovial never disappoints!

    My kids favorite pasta shape

    This is the best pasta I have ever tasted. Even just boiling it in salt water, you can eat it plain with out any sauce or butter and its fantastic. Not starchy or pasty like another very popular brand in a dark blue box. Just buy it.
