The Story of Jovial and Brown Rice

Several years ago, Carla approached a Tuscan pasta factory with the idea of making an organic gluten free pasta with only one ingredient, organic brown rice flour. She also asked that the pasta be pressed with traditional bronze dies, not with the Teflon dies used by today’s large pasta manufacturers. Additionally, the pasta had to be dried at low temperatures. No small feat for gluten free, but she had a hunch that jovial consumers would taste & appreciate the difference.

    Fabulous

    Waxing poetic over pasta may seem silly, but I feel like I could in this case. In my house, we have people with Celiac, people who can't eat dairy, or eggs, or beef. Making a yummy lasagna is a challenge, but at least the pasta is spot on, every time!

    I was really excited about making a gluten -free, dairy-free lasagna for Christmas Eve dinner. My recipe said to cook the noodle first. However, the Jovial box of lasagna noodles said to use the noodles uncooked. I wish I had followed my recipe. I used plenty of sauce, but noodles were never even al dente. Everything tasted delicious, except for the hard noodles. When you consider the higher cost of the vegan ricotta cheese and vegan mozzarella, this recipe was an unfortunate and expensive learning experience If there is a next time, I will cook these noodles first.

    When I first went gluten free, I was devastated that I may not be able to eat certain foods again - lasagna being one of them. Jovial lasagna has allowed me to eat one of my favorite foods again, and I am so grateful. This is easy to use and tastes great. The sheets are a bit shorter than the ones I used to eat with gluten.
