I've come to the opinion we don't use stelline enough in modern day soup making. I've been pretty sick and making several batches of chicken soup with this pasta. I love it. It cooks evenly and consistently without fail. Even the next day in the fridge in the soup it still holds it's texture. I'm impressed. Highly recommend!
