The Story

We love to work in Italy because our manufacturers are large enough to supply our market, but small enough to still do things the right way, even if it means the involvement of many hands. Our beans are grown on small, organic farms in the Piemonte region of Italy. They are sorted by hand before being soaked for 24 hours. Then they are rinsed with fresh water and cooked. The jars are filled with the cooked beans, water and a bit of salt is added, then the jars are sealed and sterilized. Once the beans are cooled and the jars are wiped down, the labels are applied and the product is packed up to ship.

Best quality you can get. These are just slightly undercooked. The beans are very hard, slightly crunchy. Edible still. But less enjoyable.

I like the fact that these black beans are 100 percent organic (no persistent pesticide residues), and that they are packed in glass jars (no problems with metal leaching into the beans from a metal can). Even better, the flavor is better than other black beans, either cooked from dried OR from a can. Most recipes using 'canned' beans use 1 1/2 cups of drained beans, so instead of just draining and dumping, you *do* need to measure, but there's always something to which one can add a few 'leftover' beans - tossed salads, pasta salads, or just heat the rest and use as a 'side' for whatever meal is next. All of Jovial's beans are great, but the black beans are my favorite.

These beans are excellent. They are tasty and healthy. I love that they are soaked, rinsed, and pressure cooked to kill lectins and a glass jar is so much more healthier to eat from. Not to mention the convenience of a smaller jar. No more throwing out unused beans that sat in the fridge too long. If you are on the fence about purchasing these just do it. You won't regret it.

So happy to find beans that are already soaked, rinsed and cooked. Such a time saver, thank you!

I can say this about all of Jovial's beans: I've used dried and canned and none of them cook up or taste as good as these jarred beans. I even like that the jars contain a slightly smaller quantity than cans. No leftovers. The texture and taste are their chief virtues, but really, just the way they behave in a recipe is surefire. And the liquid they're in can often be used in the same recipe or applied to a different one. Just pure excellence.
