Made from nature's original wheat, einkorn has remained untouched by modern hybridization and large-scale agriculture for 12,000 years. Einkorn is fast becoming the wheat of choice for the gluten sensitive due to its very weak gluten. All Purpose is a high-extraction, lighter flour that has had 20% of the bran and germ removed after milling and will stay fresh longer. Bake beautiful bread, cakes, muffins, and cookies with Jovial's Organic Einkorn Flour—it’s much easier to work with than gluten free flour.

The Story of Jovial and Einkorn

When Carla and Rodolfo had the idea of growing einkorn wheat, there was very little of this grain being cultivated worldwide, so they had to coordinate the farming themselves. Their search led us to this farm, where they had been growing ancient varieties of oats, barley, emmer, lentils, and chick peas for over thirty years. They had never planted einkorn before, and now, only a few years later, we are working together on this project in a perfect partnership committed not only to what we are growing, but how we grow it.

    Love this flour

    I make French boule sourdough bread from this einkorn flour. The bread is easy to digest and has a low glycemic index. I stay full longer. I follow the recipe in the Jovial cookbook. The videos are very helpful. Give this a try..it takes time to perfect it but it is worth the effort.

    The only flour we use!

    After a family member developed a gluten intolerance, our family switched to einkorn and we haven’t looked back! This nutty, protein rich ancient grain is more flavorful, easier to digest, and is not treated with harmful chemicals. Win, win, win! We use it cup for cup in recipes that call for conventional flour. Everything from tortillas to cake.

    Absolutely superb!

    The flavor of this flour is incredible, and - for someone whose body is happiest with lower gluten in my diet - it's allowed me to enjoy homemade pizza and waffles without exacerbating my inflammation. Takes a little bit of getting used to how it behaves in recipes, as the lower gluten means less stretch, and also seems to form a wetter dough when following the traditional flour recipes. A small workaround for an incredible product that I will now always keep on hand. Worth every penny!
