Wheat Berry & Black Bean Veggie Burgers

Ingredients

These aren’t your average veggie burgers! Satisfying and delicious with flavors of onion, garlic, and jalapeno—plus a wonderful extra bit of chewiness from the Einkorn Wheat Berries! You can enjoy them fixed up as any other burger, or they are absolutely flavorful enough to stand alone, alongside a salad or a few slices of avocado.

Instructions

  1. Bring 1 cup of water to a boil. Add the wheat berries and simmer on low for 15-20 minutes, until the water has absorbed.  
  2. While the wheat berries cook, chop the onion, garlic, and jalapeño into small pieces. Heat up 1 tablespoon of olive oil in a pan, then pan-fry the chopped ingredients until the onions are soft and slightly golden. Salt the mixture slightly.
  3. In the meantime, drain and rinse the beans and put them in a bowl. With an immersion blender, blend them slightly so as to create a thick paste with some whole beans remaining. Once cooked, transfer the onions, garlic, and jalapeños to the same bowl as the beans.
  4. Add the breadcrumbs (any work, but we recommend using einkorn breadcrumbs), egg yolks, salt, and pepper to the mixture. By this time, the wheatberries should also be done cooking, go ahead and add those as well. Combine all the ingredients with either your hands or a fork, once all the ingredients are evenly incorporated, you are ready to form veggie burgers.
  5. Shape 6 to 8 veggie burgers using your hands, then pan-fry them with a few tablespoons of olive oil until both sides are darker and have created a nice crust (this should take 3 to 5 minutes per side).

  • Can I use any wheat berries. I have spelt and kamut berries that are not being used as fast now that I have discovered einkorn☺️

  • haven’t made them yet but the problem with many veggie/bean burger is thhey are mushy- even if you get a nice crust on them…

    can anyone give me feedback on this issue?

  • You can substitute with any kind of binder you would use for meatballs, etc. Such as a Flax “egg.” Please keep in mind we have not tested this substitution and it may alter the final results.
