Making your own ketchup at home is easy and it lets you control what goes in it. Just grab a jar of jovial diced tomatoes and a few other ingredients and you are ready to go!
Instructions
- In a heavy bottom 2 quart sauce pot, set on medium heat, add the olive oil.
- Add the onions and garlic and cook, stirring occasionally 8 minutes or until the onion mixture has softened and is translucent in color.
- Add the tomato paste, cider vinegar, diced tomatoes, honey and salt and bring to a simmer.
- Simmer 1 hour; stirring occasionally (ketchup should be thick).
- Using a stick/emersion blender or food processor puree ketchup until it is very smooth.
- Store covered in refrigerator overnight to develop and combine flavours.
Ketchup can be held in refrigerator up to 3 weeks.
