Einkorn Zucchini Bread Recipe with Chocolate Chips

Ingredients

  • 1 cup (125g), 2 small or 1 medium zucchini, finely grated
  • 1¾ cups (210g) Jovial All-Purpose Einkorn Flour
  • 1¾ tsp. (7g) baking powder
  • ¾ tsp. (4g) baking soda
  • ½ tsp. (2g) cinnamon
  • ¼ tsp. (1g) salt
  • 2 large eggs, room temperature
  • 1 cup (200g) organic cane sugar
  • 2 tbsp. (30g) plain yogurt
  • ¼ cup (48g) Jovial Extra Virgin Olive Oil
  • ¾ cup (120g) chocolate chips

Instructions

    1. Preheat oven to 375°F.
    2. In a medium bowl, sift together flour, baking powder, baking soda, cinnamon and salt; set aside.
    3. In a large bowl, beat together eggs, sugar, yogurt, and olive oil. Stir in zucchini.
    4. Add the flour mixture into the wet ingredients until combined. Do not over mix.
    5. Use rubber spatula mix in chocolate chips.
    6. Oil a 9"×5" inch loaf pan, then pour in batter.
    7. Bake for 50-55 minutes or until cake tester comes out clean.
    8. Transfer to a cooling a rack and cool before serving.
