Ingredients
- Heat a large pot over medium-low heat. Once hot, add olive oil. Once oil is hot add onion, garlic, dried basil, and a pinch of red pepper flakes. Sauté until onion is translucent—about 10 minutes.
- Add diced tomatoes, vegetable broth, and potato. Bring to a gentle simmer, simmer for 20 minutes or until potato is soft.
- Let soup cool slightly. Then transfer to a high-speed blender or use an immersion blender to blend until completely smooth. Salt and pepper to taste.
