Rustic Tomato Soup

Ingredients

  • 2 tbsp Bionaturae Extra Virgin Olive Oil 
  • 1 medium yellow onion, small dice 
  • 2 garlic cloves, minced 
  • 2 tsp dried basil 
  • Pinch red pepper flakes 
  • 1 (28 oz) can Bionaturae Diced Tomatoes 
  • 3 cups vegetable broth 
  • 1 medium russet potato, medium dice, skin on 
  • Salt to taste, about 1 ½ - 2 tsp

Ingredients

  1. Heat a large pot over medium-low heat. Once hot, add olive oil. Once oil is hot add onion, garlic, dried basil, and a pinch of red pepper flakes. Sauté until onion is translucent—about 10 minutes.
  2. Add diced tomatoes, vegetable broth, and potato. Bring to a gentle simmer, simmer for 20 minutes or until potato is soft
  3. Let soup cool slightly. Then transfer to a high-speed blender or use an immersion blender to blend until completely smooth. Salt and pepper to taste.
