Makes: 2 Pear Margaritas or Green Tea Mocktail Refreshers

Instructions

  1. Begin by making the pear syrup. In a small pot, combine 6 oz of pear nectar and 2 tablespoons of sugar. Turn on the stove to a medium heat and let the syrup simmer for 5-10 minutes or until reduced by half and thicker, mixing occasionally. The syrup should not smell burnt or boil excessively; if any of these apply, then reduce the heat and mix.
  2. Set the syrup aside and let it cool to room temperature. While the syrup cools, steep about one cup of tea with all three of the tea bags for about 3 minutes, then remove the tea bags. Add 2 tablespoons of sugar to the tea, mix and then set aside to cool.
  3. Squeeze the juice of 4 limes and set aside.
  4. To make two margaritas: in a shaker with ice, combine 8 oz of tequila, 3 ounces of pear nectar syrup, 3 oz of lime juice, 1 oz of sweetened green tea. Shake, then pour into a salt or sugar-rimmed glass with ice. Garnish with a lime wedge.
  5. To make two mocktails: in a shaker with ice, combine 1 ounce of pear syrup, 3 oz of pear nectar, 3 oz of lime juice, 6 oz of sweetened green tea. Shake, then pour into a glass with ice. Garnish with a lime wedge.
