This simple vinaigrette is an easy recipe that can be made in advance (great for meal prep) and stored in your refrigerator for three weeks. INSTRUCTIONS:
- In a small jar (or blender) add the balsamic, Dijon mustard, honey, salt and pepper.
- Using an immersion blender or regular blender mix well (about 30 seconds).
- Gradually add in the olive oil and blend for about 1 minute until you have a thick consistency.
- Store in a jar (airtight) in the refrigerator for up to three weeks.
