Cherry Tomato Pasta Salad with Sourdough Farfalle

Ingredients

• 1 (12 oz) box Bionaturae Sourdough Farfalle
• 8 oz fresh mozzarella, cubed
• 1 pint (about 2 cups) cherry tomatoes, halved
• ½ cup Kalamata olives, pitted and roughly chopped
• ¼ cup fresh basil leaves, torn
• ½ teaspoon dried oregano
• ⅓ cup Bionaturae Extra Virgin Olive Oil
• 1–2 tablespoons fresh lemon juice
• Fine sea salt, to taste
• Freshly ground black pepper, to taste
• 1 (5 oz) can high-quality tuna packed in olive oil, drained and flaked (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook Bionaturae Sourdough Farfalle according to package instructions, until al dente. Drain.
  2. In a large serving bowl, combine the slightly cooled pasta, mozzarella, cherry tomatoes, Kalamata olives, and oregano. If using, gently fold in the tuna.
  3. Drizzle with extra virgin olive oil and lemon juice. Season with the salt and pepper to taste, then toss until evenly coated.
  4. Taste and adjust seasoning and olive oil, as desired.
  5. This recipe can be served immediately, or refrigerated for 30 minutes to chill. Garnish fresh basil just before serving.
