The Story of Jovial and Einkorn

When Carla and Rodolfo had the idea of growing einkorn wheat, there was very little of this grain being cultivated worldwide, so they had to coordinate the farming themselves. Their search led us to this farm, where they had been growing ancient varieties of oats, barley, emmer, lentils, and chick peas for over thirty years. They had never planted einkorn before, and now, only a few years later, we are working together on this project in a perfect partnership committed not only to what we are growing, but how we grow it.

    So much better than the regular pasta they sell in stores. I don’t do well with pasta or even regular flour, but einkorn doesn’t mess with my stomach the way regular wheat does. Has a nuttier flavor.

    Love all einkorn pasta.

    My picky eaters, love einkorn flour pasta. We’ve been using it for at least five years. Don’t use any other pasta thank you for making such a great product.

    Tasty!

    I tried einkorn spaghetti for the first time and was genuinely impressed. The texture was slightly softer than regular wheat pasta but still pleasantly firm, with a subtle nutty flavor that made it taste richer and more wholesome. Definitely something I'd have again!

    Real spaghetti!

    It's great to have a real spaghetti available that I can eat as I can't eat so many of the gluten free alternatives . I hope someday you can come out with a capellini as well.
