Shrimp Pasta with Cassava Spaghetti, Yellow Pepper & Basil

  1. In a large skillet, heat 2 tablespoons olive oil over medium-low heat and add the chopped peppers and onion. Season with salt and pepper. Sauté for a few minutes until soft, about 6 minutes. Add the water and continue to simmer for 15 minutes.
  2. Cook pasta according to package instructions, reserving 1 cup of the pasta cooking water before draining.
  3. While the pasta is cooking, transfer the sauce to a blender or food processor and puree, slowly adding the remaining 2 tablespoons of olive oil and ¼ cup of the pasta cooking water through the feed tube, until the sauce is creamy. Return the sauce to a simmer, add the shrimp. Cook until pink and just cooked, 2 to 3 minutes.
  4. Add the drained pasta to the sauce and stir to combine. Adjust the consistency with some of the reserved pasta water, if needed.
  5. Garnish with fresh basil and serve.
