The Story of Jovial and Einkorn

When Carla and Rodolfo had the idea of growing einkorn wheat, there was very little of this grain being cultivated worldwide, so they had to coordinate the farming themselves. Their search led us to this farm, where they had been growing ancient varieties of oats, barley, emmer, lentils, and chick peas for over thirty years. They had never planted einkorn before, and now, only a few years later, we are working together on this project in a perfect partnership committed not only to what we are growing, but how we grow it.

    Banana Bread!!

    I love this flour and what I can make with it! My favorite so far is the banana bread and the pie crusts are pretty tasty as well. Of course the bread started it all. If you are gluten sensitive, this is worth a try. Or if you just want something unmodified, again, worth a try. I love that I can make something wholesome and yummy. So good!

    Organic Einkorn Whole Wheat Flour

    I'm so glad I finally tried einkorn flour. I have hashimoto's thyroiditis and have to avoid gluten , but after seeing Carla talk about her daughter's issues and how she came about growing einkorn, I decided to try it. I'd been making my own sourdough bread for 35 years and was devastated when I was diagnosed and couldn't eat it any more. But now I made my own einkorn starter and have been making bread and have no gluten issues. I just love the consistency of the dough, and it also makes wonderful pizza crust. I love Carla's videos and was so sorry to hear that she passed...I could tell she was an amazing person.
