The Story of Jovial and Einkorn

When Carla and Rodolfo had the idea of growing einkorn wheat, there was very little of this grain being cultivated worldwide, so they had to coordinate the farming themselves. Their search led us to this farm, where they had been growing ancient varieties of oats, barley, emmer, lentils, and chick peas for over thirty years. They had never planted einkorn before, and now, only a few years later, we are working together on this project in a perfect partnership committed not only to what we are growing, but how we grow it.

    Most amazing flour ever!

    I've been using Einkorn flour since January of this year. I wanted to make sourdough and i wanted clean, organic, NonGMO flour for my family to eat. It took me a little to get used to the lower gluten content and learn the way it works up. I also make pizza dough! I recommend this flour to all of my friends.

    Amazing flour!
