The Story of Jovial and Einkorn

When Carla and Rodolfo had the idea of growing einkorn wheat, there was very little of this grain being cultivated worldwide, so they had to coordinate the farming themselves. Their search led us to this farm, where they had been growing ancient varieties of oats, barley, emmer, lentils, and chick peas for over thirty years. They had never planted einkorn before, and now, only a few years later, we are working together on this project in a perfect partnership committed not only to what we are growing, but how we grow it.

    Most amazing flour ever!

    I've been using Einkorn flour since January of this year. I wanted to make sourdough and i wanted clean, organic, NonGMO flour for my family to eat. It took me a little to get used to the lower gluten content and learn the way it works up. I also make pizza dough! I recommend this flour to all of my friends.

    The flour we all should be using

    This is the real deal! We have all become accustomed to the really refined, really white and high gluten flour that we get at the grocery store, but this flour we ought to get used to! I blend it with other types of flour for different uses, but the flavor is incredible and while the gluten is not strong and stretchy, I have found that some practice and patience pays off- I get some of the best loaves of my life with this stuff. It is also great for cookies and muffins and you don't need as much butter to get the same results as you would with regular flour. A+++!

    Best flour ever

    Learning curve working with it, but the peace of mind you get knowing it’s a high quality product makes it worth it. And what they say about those with gluten sensitivity being able to consume foods with this flour is definitely a thing!
