The Story

We love to work in Italy because our manufacturers are large enough to supply our market, but small enough to still do things the right way, even if it means the involvement of many hands. Our beans are grown on small, organic farms in the Piemonte region of Italy. They are sorted by hand before being soaked for 24 hours. Then they are rinsed with fresh water and cooked. The jars are filled with the cooked beans, water and a bit of salt is added, then the jars are sealed and sterilized. Once the beans are cooled and the jars are wiped down, the labels are applied and the product is packed up to ship.

    Wow! The fastest pasta salad starter ever.

    One jar of these vegetables (the brine and all) with cooked pasta and a little mayonnaise and some meats like pepperoni, ham, bacon bits and cheese. The crew working on the porch made sure I had no leftovers, the next day I opened another jar. This will be a staple for a quick summer lunch or dinner as a sandwich and salad on a hot day takes so little time to make. I would never have used some of these vegetables in pasta salad but they are perfect.

    Excellent pickled flavor. Organic & ingredients glass so no chemical after flavor whatsoever. Delicious.

    Helping with pre and probiotics. We sprinkle some over salads and on Italian sandwiches. Just like the old days!
