Jalapeno Cheddar Einkorn Polenta

Ingredients

  • 1 ½ cups Jovial Einkorn Wheat Berries
  • 3 ½ cups of water
  • 1 tsp. sea salt
  • 2-3 jalapeño peppers
  • 4 scallions, thinly sliced
  • 3 tbsp. Jovial Extra Virgin Olive Oil
  • 2 cups (4 oz.) grated sharp cheddar cheese

Polenta is actually considered a comfort food in Italy. We’ve taken our einkorn wheat berries and made a tasty dish combining the flavor of jalapenos and sharp cheddar cheese. This will be a crowd favorite.

Instructions

  1. Cut jalapeño lengthwise and clean seeds; slice very thin.
  2. Grind wheat berries to a very coarse corn meal texture in a blender.
  3. Bring water to a boil, add salt and cook einkorn on low for 10 min.
  4. Stir in olive oil, scallions and peppers and simmer on low covered for 10 minutes more.
  5. Remove from heat, stir in cheese. Let stand for 5 minutes before serving.
