Green Goddess Salad Dressing

Ingredients

  • 2 large egg yolks
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons fresh lemon juice
  • ½ cup Jovial Extra Virgin Olive Oil
  • 3 tablespoons Greek yogurt
  • 2 tablespoons minced parsley
  • 2 tablespoons minced chives
  • 1 teaspoon minced tarragon
  • 1 clove minced garlic
  • ½ teaspoon fine sea salt

Makes about 1 cup

Instructions

  1. Add the yolks, vinegar, and lemon juice to a wide-mouth jar or a glass measuring cup.
  2. With a hand or immersion blender, begin beating the ingredients, adding 1 tablespoon of olive oil at a time, giving the mixture time to emulsify as you blend.
  3. When the olive oil has all been added and the mixture is thick, add the yogurt, herbs, garlic, and salt.
  4. Blend until the dressing becomes a light green color with a pourable consistency.
  5. Store in the refrigerator for up to 3 days.
