Greek Einkorn Wheat Berry Salad

Ingredients

For the Dressing

  • ¼ cup Jovial 100% Organic Extra Virgin Olive Oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ¼ teaspoon each salt and pepper

For the Salad

  • 1 ½ cups (288g) Einkorn Wheat Berries
  • ½ English cucumber, about 1 cup (100g), diced
  • 1 cup (150g) grape or cherry tomatoes, halved
  • 1 medium red pepper, diced, 1 cup (120g)
  • ½ medium red onion, about ½ cup (50g), diced
  • ⅔ cup (120g) pitted kalamata olives, roughly chopped
  • 1 cup (120g) crumbled feta

Instructions

Cook the wheat berries:

  1. In a medium pot, bring 3 cups of water to a boil. Add the wheat berries, stir, and simmer on low for 30-35 minutes, or until tender. Drain away excess water.

For the Dressing:

  1. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, mustard, garlic, oregano, salt and pepper.
  2. In a large bowl, toss the wheat berries with the cucumber, tomatoes, red pepper, onion, olives and feta cheese. Fold in the dressing. Taste and adjust the seasoning, adding additional salt and pepper, as desired.
