Grain Free Orzo Risotto With Fresh Herbs

Ingredients

  • 3 tablespoons butter
  • 1 tablespoon Jovial 100% Organic Extra Virgin Olive Oil
  • ½ yellow onion, minced
  • ¼ teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper
  • 1 clove garlic, minced
  • 8 ounce box Jovial Grain Free Cassava Orzo
  • 3 cups vegetable, chicken, or bone broth
  • ½ cup grated Parmigiano Reggiano cheese
  • ¼ cup basil, chopped fresh
  • 2 tablespoons chives, chopped
  • 2 tablespoons parsley, minced

Instructions

  1. Melt the butter and olive oil in a large saucepan over medium heat. Add onion, salt, and pepper and cook on low until tender, about 5 minutes. Add garlic and cook for an additional minute.
  2. Add orzo to the pan and stir to coat the pasta with the onion mixture. Add broth and increase the heat to high until the mixture comes to a boil.
  3. Once boiling, lower the heat and simmer, uncovered, until the orzo is tender and most of the liquid is absorbed, about 20 minutes.
  4. Remove from heat. Fold in the cheese, basil, chives, and parsley. Taste and adjust the seasoning as desired.
