This chocolatey homemade granola recipe is decadent on its own, but becomes a show-stopping treat when added to a yogurt parfait! We’ve also topped it all off with a tangy lemon berry jam that makes it simply delicious. Adding our 100% Organic Einkorn Wheat Berries to the granola gives this recipe extra protein, fiber, and B vitamins—plus extra flavor and crunch!
Dry toasting wheat berries is similar to making stovetop popcorn, the wheat berries will pop and become crunchy! They’re very easy to burn, so keep an eye on them, and carefully shake the pan every so often to distribute the heat. Once the toasted wheat berries are plump and fragrant, immediately pour them into a mixing bowl to stop the cooking process. You can add the toasted wheat berries to any granola recipe, simply substitute for a portion of the rolled oats.
Instructions
- Make the jam: Combine the fruit, sugar, and lemon juice in a saucepan.
- Bring to a simmer over low heat, and let cook.
- While the jam simmers, begin preparing the granola. Preheat an oven to 350 F°
- In a pan or skillet (preferably with a lid), dry toast the wheat berries over medium heat for about 5 minutes, carefully shaking and swirling the pan occasionally. The wheat berries should pop and become crunchy. Make sure they don’t overly brown, lower the heat if needed. Immediately move to a large mixing bowl to cool to stop cooking.
- Add the remaining ingredients to the mixing bowl, except for the chocolate chips. Mix until all ingredients are evenly distributed.
- Line a baking sheet with parchment paper and spread the granola mixture into an even thin layer across the whole tray. Sprinkle the chocolate chips over the whole surface of the granola (they will melt while cooking and create crunchy lumps of granola). Bake for 30 to 35 minutes, giving the granola a mix halfway through the cooking time.
- The jam should have reduced and thickened by now, set both the jam and granola to cool at room temperature.
- Once completely cool, assemble the yogurt parfaits by layering about ¼ cup yogurt, 2 tablespoons granola, 2 tablespoons jam, and a handful of fresh berries. Repeat this layering twice. Serve and enjoy! Leftover granola can be stored in an airtight container at room temperature for a 2-3 weeks, while leftover jam can be stored in an airtight container in the fridge for several days.

Soaking grains makes them easier to digest and absorb the nutrients, is it possible to soak and then roast the wheat berries?
