- Spread chickpeas out on a dry, clean towel and allow to air dry for 30 minutes. You want to be sure your chickpeas are completely dry before roasting. Remove any loose skins.
- Preheat the oven to 400° F. Line a small baking sheet with parchment paper or a silicone mat.
- Place chickpeas on prepared baking sheet and bake for 15 minutes.
- Remove the pan from the oven and toss the chickpeas with olive oil, sugar and cinnamon.
- Bake for an additional 15-17 minutes, or until golden brown and crunchy.
- Store chickpeas in a dry, airtight container but aim to enjoy them within one day of baking.
