


Recipe by Shaye Elliott. This Chocolate Pear Pudding Cake is a lovely, fuss-free dessert made with our 100% Organic Einkorn Flour. Serve to guests with a cup of tea or coffee for a perfect post-dinner treat.
Instructions
- Preheat the oven to 400° F.
- Butter an 8” springform pan or a pie dish.
- Peel the pears, cut them in half, and use a spoon to scoop out the core and stems.
- Add the flour, sugar, baking powder, eggs, cocoa powder, butter, and sea salt into a food processor. Process the mixture until it resembles a thick, chocolate pudding.
- Scoop the cake mixture into the prepared pan and use a spatula to create an even layer of cake batter. Add the pear pieces, cut side down, into the pan in an even layer.
- Bake the cake for 30 minutes, until it’s just slightly underbaked (it should be gooey in the middle!). Dust with additional cocoa powder, if desired, and serve immediately.

I’ll probably slice the pears up next time and cook it a little less but it was really good!

So I made this recipe yesterday and it was quick and easy. The only thing I found not to my liking were that the pears were still quite firm after baking. In another recipe using einkorn with pears they call for poaching the pears for about 12 to 15 minutes so if I do try the recipe again, I will opt for that approach. Overall a quick and easy dessert that’s not overly sweet.

Will cacao powder work as a sub for the cocoa powder in this recipe? Any tweak I should make if using cacao?
