Fair Trade and Soy Free

If you have been wanting to try our gluten free cookies but you don't like soy, we have good news for you. We have eliminated all soy ingredients from our cookies, replacing the flour with buckwheat and/or chickpea flour. The ancient grain buckwheat arrived in Venice in the 16th century and is an ingredient used in many Italian traditional recipes. Our bakery is located just outside of Venice, if you didn't know. Our new recipe balances the flavor of buckwheat and chickpea flours, both grown on a local and trusted organic farm for us, giving the outer cookie a softer texture and great taste.

Our packaging looks a little different too. We have designed each two pack for individual retail sale so you can grab a quick gluten free snack on the go. Ask for them at you local organic foods store. We go to great lengths to use only the best ingredients, and we explain more about this on our new package design, talking about the prehistoric salt we use, about how our palm oil is farmed with sustainable practices and how our hens are free to roam on a small countryside farm. And if einkorn cookies are your favorite, (checkerboard is our number one selling cookie!), we have great news for you too. We are now combining our ancient einkorn with Fair Trade certified ingredients so your purchase will help not only einkorn farmers, but also farmers in developing communities who deserve just compensation. Our cookies now have Fair Trade cocoa, sugar, cinnamon and ginger and we are using these ingredients without extra cost to you. Keep an eye out for our new packaging featuring the Fair Trade logo.
