The Story of Jovial and Einkorn

When Carla and Rodolfo had the idea of growing einkorn wheat, there was very little of this grain being cultivated worldwide, so they had to coordinate the farming themselves. Their search led us to this farm, where they had been growing ancient varieties of oats, barley, emmer, lentils, and chick peas for over thirty years. They had never planted einkorn before, and now, only a few years later, we are working together on this project in a perfect partnership committed not only to what we are growing, but how we grow it.

    Flour Good for You

    I make many different breads using both Einkorn Whole Wheat and Einkorn All Purpose Flour. I know they are nutritious for the body and taste good too. Although Einkorn is a bit harder to work with as it doesn't have as much gluten in it, the fact that it is a healthy flour makes it worth the effort. The recipes are endless!

    This is the only flour I can eat.

    Einkorn flour is the only flour I can eat, and it is the best flour to bake with - the sourdought bread I make with it is delicious. One needs special recipes because it does not act strictly like regular flour, but it is worth the extra 3 cookbooks I bought so I can use it. Thank you

    Adds flavor to all purpose Einkorn

    I love baking Einkorn sandwich loaves. I found that adding a fourth (one cup) of whole wheat to the mix gives a uniquely tasty addition to the loaves.
