Made from nature's original wheat, einkorn has remained untouched by modern hybridization and large-scale agriculture for 12,000 years. Einkorn is fast becoming the wheat of choice for the gluten sensitive due to its very weak gluten. All Purpose is a high-extraction, lighter flour that has had 20% of the bran and germ removed after milling and will stay fresh longer. When Carla and Rodolfo had the idea of growing einkorn wheat, there was very little of this grain being cultivated worldwide, so they had to coordinate the farming themselves. Their search led us to this farm, where they had been growing ancient varieties of oats, barley, emmer, lentils, and chick peas for over thirty years. They had never planted einkorn before, and now, only a few years later, we are working together on this project in a perfect partnership committed not only to what we are growing, but how we grow it.
