100% Whole Grain Einkorn Bread Machine Recipe

To create a custom cycle for einkorn bread made in a bread machine, you will need to set each stage of the cycle as follows (For those that do not have a custom cycle on your machine, please check your manuals to choose the cycle closest to the times we recommend):
Preheat off, Knead 10 minutes, Rise 1: 45 minutes, Knead 2: 5 minutes, Rise 2: 30, Rise 3: Off, Bake: 50 minutes. Crust: medium or dark. (*Omit second knead if the setting is not available on your machine).
The cycles of each machine can vary, but what you are looking for is a cycle with about a 2 hour duration. We have listed a number of different options for ingredients so you may customize your loaf.
Ingredients
- ¾ cup (180 g) liquid, such as buttermilk, milk, kefir or water (we prefer water over non-dairy beverages in bread baking, if you are intolerant to dairy)
- 1/2 cup (118 g) warm water at 100°F
- 2 tablespoons of melted and cooled or liquid fats, such as butter, coconut oil, leaf lard, extra virgin olive oil, or sunflower oil
- 1 to 2 tablespoons sweetener, such as sugar, brown sugar, honey or maple syrup
- 1 ¼ teaspoons fine sea salt
- 4 ¾ cups jovial Whole Grain Einkorn Flour or 2 ¼ cups (450 g) jovial Einkorn Wheat Berries, ground to flour
- 1 ¼ teaspoons dry active yeast
Instructions
- Add the liquids, fats, sweetener, and salt to the loaf pan.
- Place the flour on top of the liquids.
- Make a shallow well in the center of the flour and add the yeast.
- Set and start the custom cycle for einkorn bread as indicated above. Because einkorn is very sticky, the dough may be more likely to stick to the sides of the pan during kneading, resulting in a lopsided bread. If you are home, you can scrape down the sides as needed with a spatula before baking.
- Once the cycle is complete, remove the pan from the machine and allow the loaf to cool for 5 minutes.
- Turn out the bread on a cooling rack and allow to cool for 1-2 hours before slicing. Slicing warm einkorn bread is not recommended.
