Einkorn Wheat Berries

Einkorn wheat berries are great way of adding a power-packed grain to your diet. Enjoy these berries cooked and thrown into a salad, cracked and boiled like porridge, or ground into fresh whole-grain einkorn flour. They are a great ingredient to have on hand in your pantry because they provide convenient, super nutrition.

What Are Einkorn Wheat Berries?

Similar to what some call farro, einkorn wheat berries are entire kernels of einkorn wheat, including all the goodness of the bran, germ, and endosperm.

Unlike modern wheat, Einkorn grows inside an outer husk. This is carefully cleaned, without polishing or pearling the grain, to ensure that 100% of the bran and germ are conserved. In other words, the good stuff isn’t taken out in the process!

Einkorn is an ancient variety of wheat that has never been hybridized. It differs from modern wheat in a number of ways including:

● Einkorn is not gluten-free, but its weak gluten makes it easier to digest
● It is higher in protein and lower in carbohydrates
● It is richer in carotenoids, B-vitamins, and essential and trace minerals
● The taste is similar, yet unique. Einkorn has a nutty flavor, and the wheat berries have a pleasant chew.

How to Use Einkorn Wheat Berries

Einkorn wheat berries taste delicious and add extra nutritional value to any dish. There are numerous ways to eat them, but here are the main ways to use them:

Cook
For a nutritious side dish or salad topping, cook the berries like brown rice (boil for about 30 minutes). We recommend adding a touch of sea salt and some butter or olive oil.

Crack
For a hearty breakfast, crack the einkorn wheat berries in a blender and cook on the stove like steel-cut oats. Fun fact: Einkorn was eaten by the Romans in this way!

Grind
For baking, grind the berries in a grain mill. This method will give you 100% whole wheat einkorn flour.
