Whole Grain Einkorn Pancakes

When it comes to pancakes, we have to say our favorite recipe is made with 100% whole grain flour. You can experience the inherently sweet and wholesome flavor of einkorn quite easily with these pancakes. They will also sustain you longer, thanks to einkorn’s added protein.
Ingredients
- 1 cup (192 g) of jovial Einkorn Wheatberries, ground to flour or 2 cups (192 g) jovial Whole Grain Einkorn Flour
- 2 tablespoons (20 g) whole golden flax seeds
- 1 tablespoon (10 g) brown sugar
- ¼ teaspoon (2 g) fine sea salt
- 1 tablespoon (12 g) baking powder, sifted
- 2 eggs
- ½ cup (130 g) kefir or yogurt
- 1 cup (253 g) milk, your preference
- 2 tablespoons (30 g) unsalted butter, melted
Instructions
- Whisk together eggs, kefir or yogurt, and milk in a medium mixing bowl.
- Grind the flax seeds in your coffee grinder to a fine powder. Remember, it is so easy to grind flax seeds and this ensures better levels of fatty acids and CLA’s than pre-ground seeds.
- Whisk the flour and ground flax in the wet ingredients and let stand for 5 minutes while you heat your griddle to medium heat.
- When your skillet is hot, whisk in the brown sugar, salt and baking powder until well incorporated.
- Pour in melted butter and stir gently until smooth.
- You can adjust the thickness of the batter now by adding either more flour or milk, if needed. The amounts may vary slightly depending on how fine your can grind your flour.
- The pancakes will expand nicely and cook well inside, but you might not see the same amount of bubbles that you are used to with regular wheat flour or even spelt. Therefore, be careful not to burn the bottom before flipping.
Note: If you prefer to soak or sour your grains, simply use all kefir or yogurt and no milk, that is 1¼ cup (315g). Add the kefir to a medium mixing bowl then whisk in the flour until smooth. Cover and let stand at room temperature in a dark place overnight. In the morning, whisk in the eggs, then add the rest of the ingredients as directed above. If the batter needs thinning, you can add a bit more milk.
