  1. Heat oil in a large skillet. Add the garlic, tomatoes and red pepper with salt to taste.
  2. Simmer for 25 minutes, breaking up the tomatoes as they soften.
  3. Cook the pasta according to package instructions.
  4. Turn the sauce up to high, add the drained pasta and parsley, cook for about a minute until the pasta absorbs the sauce. Serve with Pecorino Romano cheese right from the skillet.
