Penne, Tomatoes, Arugula & Shaved Pecorino Romano

Ingredients
- 2 pints cherry tomatoes, halved
- 1 clove garlic, minced
- 3 tbsp. jovial Reserve Extra Virgin Olive Oil
- 2 tsp. balsamic vinegar
- Salt and pepper to taste
- 2 cups chopped arugula
- ¼ cup shaved Pecorino Romano cheese
- 12 ounces jovial Einkorn Penne Rigate
Instructions
- In a large serving bowl combine tomatoes, garlic, oil, vinegar, salt and pepper to taste.
- Let stand for 30 minutes, mixing occasionally.
- Cook the pasta according to package instructions.
- Drain the pasta and add to the tomatoes. Toss in the arugula and Pecorino Romano cheese and serve.
