Penne with Roasted Garlic and Tomato Sauce

Enjoy the healing properties of garlic by roasting the whole cloves and adding them to a tomato sauce, flavored with Mediterranean herbs like basil, oregano, thyme and sage.
Ingredients
- 12 oz. jovial Brown Rice Penne Rigate
- 1 head of garlic
- 3 tbsp. jovial Reserve Blend Extra Virgin Olive Oil
- 18 oz. jovial Crushed Tomatoes
- ¼ tsp. dried oregano
- ¼ tsp. dried basil
- ¼ tsp. dried thyme
- ¼ tsp. dried sage
- ¼ tsp. crushed black pepper
Instructions
- Slice the tip off the head of garlic to expose all of the cloves. Place in baking dish and drizzle with 1 tsp. olive oil.
- Bake at 400°F for 45 minutes, covered with aluminum foil.
- Let garlic cool, then remove roasted garlic by squeezing the cloves into a large skillet. Add olive oil, spices, tomatoes and salt to taste.
- Simmer for 20 minutes on low heat, pressing the garlic with a wooden spoon to mix in the sauce.
- Cook pasta according to the directions on the package.
- Toss with sauce and serve with grated cheese.
